Lemons remind me of summer. Their bright tartness is summer to me. I love summer, probably because I’m cold all the time and it has to be really hot in order for my hands and feet to not be cold. But whenever summer’s about to arrive, the air changes. I’m serious, it acutally smells different to me- more fresh than spring, slightly dry and warm, and I can smell the memories. Summer is a very nastolgic season.
In honor of the first day of summer (which was yesterday), I made lemon cream cheese cookies from Averie Cooks!
Mine look like drop biscuits, but they are indeed cookies. I think this is because I refrigerated them for a long time; I made the dough in the afternoon and didn’t bake until the next afternoon. Keep in mind you have to refrigerate the dough for at least 3 hours, otherwise when you bake the cookies, the dough will spread! But if you like thin cookies, do whatever you like! I like my cookies soft. Averie’s recipe says that you can get about 18 medium cookies using a 2 tablespoon scoop. I got 16 cookies, which is plenty to share! The lemon flavor is nice and bright, and I’m giving away a lot of cookies today so that I don’t eat them all.
